We discovered a wonderful recipe for a steak-eggplant casserole in my mother's recipe box last week and decided to give it a try. It turned out to be absolutely delicious!


Since my husband and I sold our home over three years ago as did my mother and we found a home in which we could all live comfortably together, much merging of possessions took place.

Of course we both divested ourselves of many things also when we decided to make this move.

One thing in which we kept much of what we had gathered through the years was both of our collections of cookbooks and recipes.

My hubby's mother died a number of years ago and we also have many of her favorite recipes.


Thus...we have recipes in this house a plenty!

Recipe collection

We decided a while back to start going through this vast collection of recipes and try some of them which we would then label as being worth keeping and repeating...or culling them.


Anything made with Eggplant ( also known as Aubergine ) as an ingredient always gets my attention. So much can be done with it that we enjoy eating.

So this Steak-Eggplant Casserole recipe intrigued me.

It was written on a notepad piece of paper from Compere Insurance Agency from Pharr, Texas. And it was in my handwriting!


Obviously when I was still living at home, I must have tasted this casserole and asked for the recipe.


When I left the Rio Grande Valley, the recipe stayed in my mother's recipe box and I forgot about it.

She did not remember it so we decided it was about time to make it and decide among ourselves whether this would be a "keeper" or not.

Sadly, no note was made as from whom the recipe originated.

Eggplant is an extremely valuable vegetable full of fiber, vitamins, minerals and some phytonutrients.





At 27 calories a cup, it makes it an ideal food for those interested in losing weight.

High in fiber, it is good for the bowels and helps to satisfy one's hunger.

Providing a good source of potassium, manganese, magnesium and copper, it also contains potent antioxidants which help to protect cell membranes from damage.

Eggplant can also serve to fight the effects of LDL or bad cholesterol in one's body and has zero cholesterol of its own. It also has some anti-viral as well as anti-cancer effects that are under study.

Without even knowing all of this information, we have simply learned to love the taste which is mild and melds nicely with other flavors with which it might be paired.


It is a part of the nightshade group of plants which include potatoes, tomatoes and sweet peppers and eggplant grows much like a green or red pepper dangling from its stem above ground.

There are various varieties (and colors) but the main ones seen in the grocery stores (at least the ones in which we shop in Houston) are the bulbous purple ones or the longer skinnier varieties with the deep purple skins.

We used thinly sliced chuck steak that looked like this.

This is obviously an old recipe and called for purchasing round steak.

We no longer often see that cut of meat and we substituted thinly cut chuck steak like the picture to the right.

It also called for a #2 can of tomatoes.

No one uses that terminology anymore and we used a 14 1/2 oz sized can.

OK...so here is the recipe:

STEAK-EGGPLANT CASSEROLE

2 pounds of thinly cut chuck steak

2 pounds of green peppers

1 unpeeled large eggplant

One 14 1/2 ounce sized can of small diced tomatoes

1/2 cup of chopped green onions and tops ( I used one entire bunch )

One 8 ounce can tomato sauce

1 teaspoon salt ( you can add more after cooking if this is not enough to suit your taste )

1/2 teaspoon pepper

Pinch of oregano ( I used about 1 teaspoon )

1/4 cup of oil

Directions:

Cut the meat in long strips and mix with the flour, salt and pepper and brown in the oil.

Cut all the vegetables in long strips.

After the meat is browned, add all other ingredients.

Bake ( covered ) for 2 hours at 350 degrees Fahrenheit.

Sometimes when we make recipes like eggplant Parmesan, my mother does not like the skin left on the eggplant due to it's slightly bitter taste. So in trying this recipe again...some 40 years after it had been hand copied , I decided to peel the eggplant. I probably won't do that next time since finding out that all the wonderful phytonutrients are found to be primarily in the skin.

 

The rich stew-like consistency of the casserole was so scrumptiously delicious and flavorful that we definitely voted this recipe to be a "keeper." In fact it was rated "excellent" which is the highest rating that we give any recipe in our home.

 

My mother is not a big meat eater and she even had seconds which almost never happens.

One could serve this over rice, potatoes or pasta. A good crusty piece of bread could also be used to sop up the flavorful sauce.

We simply paired it with a crisp green salad.

My husband has been trying to get me to try eggplant, but I have always stayed away from it because I have never really known what to do with it. However, thanks to this recipe... I think I do know. Awesome!Steak-Eggplant casserole will surely lighten up my mood. Last week, I tasted and eaten eggplant omelet for my breakfast with lots of tomato catsup on it.

I am cooking eggplant with coconut milk this lunch.

Hi Billy,

I'll never know because I have given in and just grow herbs and some onions now. The critters seem to leave the herbs alone. I have a thriving crop of basil, mint, thyme, rosemary, chives, garlic chives, parsley, sage and oregano and also have a bay laurel shrub.

Now we purchase our eggplants instead of growing them. The critters won the battle!

Wish that I could successfully grow eggplants in this yard. The last few times I have tried growing them, all the eggplants have been chewed and even hauled off completely before I could harvest them. Now we get ours from the grocery store. I love eggplant prepared in all kinds of ways. Yours sounds simple and good also. Some critters (squirrels?, possums?, racoons?) have been stealing mine out of the garden. Saw some teeth marks on the first one dropped on the ground and all the rest have simply disappeared entirely. Bummer! I had dreams of growing my own this year.

I found some Chinese eggplants for the garden this year and happily planted them. So far everytime one of those skinnier (but flavorful) eggplants gets even 3 inches long, squirrels keep chewing the stems and taking the eggplants with them. Have found a few with teeth marks and others have disappeared totally. Bummer! My only hope is that the plants may get too tall later in the year for the squirrels to reach.

Yes, eggplant is versatile as you mentioned. I love eggplant with garlic sauce served in many Chinese restaurants. That served over steamed rice...yum! Making me hungry!

Eggplant is a versatile vegetable. For Greeks, their famous dish made from eggplant is mossaka. Filipinos cook it with coconut milk or fry with an egg or just boil it. Thanks for this yummy eggplant entree, Peggy.

Let me know what you think of this steak-eggplant recipe after you try it. BTW...I used some red peppers in addition to the green peppers when I first made this. Did not have enough of the green ones on hand (only 2) so substituted red for the balance of the recipe. Delicious.

The eggplant in this recipe disintegrates for the most part thickening the sauce and is certainly not a predominant flavor as you suspected. Let me know if your wife makes it and if you like it. Thanks!

Funny that you should ask. Since my husband is now in the wine business I leave all the pairings up to him. He opened a California Zinfandel and it worked well with this meal. Of course, it can also be enjoyed sans wine. Thanks for the comment.

Let me know how you like it. Another nice thing about it is that it is an easy recipe. Most of the time spent is in slicing the meat and veggies.

We also love eggplant parmesan with freshly grated parmesan or romano cheese. Will have to make more soon! Yum!

This sounds delicious! Great recipe, Peggy. I'll give this one a shot. One of my favorites is eggplant parm with plenty of Pecorino Romano, especially over some linguine and a nice thick red "gravy" as the Italians call it. Yum!
